Easy Tortellini Soup

My friend Carla is ALWAYS cooking something good in the kitchen!  She loves to cook for her family and friends.  She is a hardworking mommy and when I asked her for one of her go-to week night favorites she gave me this tortellini soup recipe.  I'm going to make this over the weekend and maybe add some diced chicken to it....yummy!  She made it for her family last night :)

Ingredients:

  • 1 tablespoon olive oil
  • 1/2 cup minced onion (about 1/2 small onion)
  • garlic clove minced
  • 4 -6 cups chicken or vegetable broth
  • 1 (14 ounce) can whole tomatoes, coarsely chopped
  • 1 (9 ounce) package fresh or dried tortellini
  • salt and pepper
  • 10 ounces fresh spinach or frozen spinach, defrosted and chopped
  • 1/4 cup freshly grated parmesan cheese (optional)

Directions:

Prep Time: 10 mins
Total Time: 30 mins

  1. In a soup pot, heat olive oil over medium high heat.
  2. Saute the onion and garlic, stirring often until onions are translucent, about 5 to 7 minutes.
  3. Add broth and tomatoes, turn heat up to high, and bring to a boil.
  4. Add the tortellini and cook according to package instructions.
  5. When tortellini is almost done, add spinach and taste, adjusting seasonings with salt and pepper.
  6. Serve immediately.
  7. Garnish each serving with a sprinkling of parmesan.
