What's for Dinner...Chicken?!

There's no doubt if you stop by our house any night of the week CHICKEN is probably what's for dinner.  I try not to eat a lot of red meat, and although my husband would prefer steak and potatoes every night...it's usually a once a week thing.  So I'm always on the hunt for a new, quick, and EASY chicken recipe.

This chicken dish I made the other night was kind of a throw together of things I had but it fit my requirements of quick and easy...and it was pretty delicious too...so I thought I would share it with you.

Ingredients:
2 boneless skinless chicken breasts
1 bag Simply Potatoes Southwest Style Hash Browns
1 cup sour cream or light sour cream
1/2 cup wine or chicken broth
green onions or scallions
salt and pepper
butter
olive oil

I seasoned the boneless chicken breasts and seared them in a pan with about 1 TB spoon olive oil and 1 TB spoon of butter (about 4 minutes each side).  At the same time brown hash browns in a separate skillet, also seasoned with salt and pepper (I used the same combination of 1 TB spoon olive oil and 1 TB spoon butter).  Then I removed the chicken from the pan and sliced it in little strips.  I returned the chicken to the pan and cooked another 2 or 3 minutes, just to make sure it was cooked through.  I added 1/2 cup wine (or you could use chicken broth) and let that cook for 1 minute.  Then added the cup of sour cream and the green onions and stirred together.  If you need more liquid you can add some chicken broth. 
Serve over the southwest hash browns!  I also served corn with mine to keep with the southwest feel, but any vegetable would go well.  Enjoy!
